Kimchi Pancake (GF, AIP friendly)

Back to reality and back to routine after a lovely weekend away in Wellesley, MA!

My body needs a reset from all that travel so I am refueling my body with this Kimchi Gluten & Grain free Pancake - this fermented vegetable is rich in probiotics that feed our good gut bacteria and support a healthy gut and immune system! Omit the eggs if you are AIP!

INGREDIENTS
2 1/2 tablespoons coconut flour
1/4 cup tapioca flour
1/2 cup water
1 lightly beaten egg (flax egg if aip/vegan)
1/4 teaspoon salt
1/4 cup chopped kimchi or more if desired


COOKING INSTRUCTIONS
Whisk together the flour, water, egg and salt.

Stir in the chopped kimchi.

Pour the batter into a pan, heated to a medium-high temperature with coconut oil. It should fill the entire pan.

Cook for 4 minutes on each side. Slice and serve hot.
